I don't think I like sardines. Where do I start?
With ones packed in olive oil rather than water or tomato sauce, on good toast, with lemon, salt and a pinch of chilli. The oil makes them rich rather than sharp, and it's how they're eaten across the Mediterranean. If that doesn't win you over, mackerel or salmon are milder places to start.
Should I drain the tin?
Drain water‑packed fish. Don't drain olive oil – it's taken on the flavour of the fish and makes a ready‑made sauce. Sardine oil with garlic and pasta is a dinner in itself, and pouring it away is throwing out the most useful thing in the tin.
How much tinned fish is sensible in a week?
Guidance on oily fish and on mercury varies by country and by species, and it's different again if you're pregnant or breastfeeding or cooking for young children. Sardines, salmon and mackerel are generally at the lower end for mercury and larger tuna at the higher end – but check your own country's advice rather than a figure from a product page.
Does tinned salmon really make patties?
It does, and they're one of the better arguments for keeping a tin in. Salmon, an egg, breadcrumbs, herbs and lemon zest, shaped and fried a few minutes a side – about a quarter of an hour from cupboard to plate.
Will my kitchen smell of fish?
Less than you'd expect, particularly for the no‑cook meals. If you're frying, put the extractor on, and simmering a little water with lemon and vinegar afterwards clears the air quickly.
