Questions
Everything you need to know.
Do I really only need one good knife?
A chef's knife handles nearly everything, with a small paring knife for fiddly work and a serrated one if you cut bread often. The block of seven is marketing.
Is cast iron worth the fuss?
There's less fuss than its reputation suggests – cook, wipe, occasionally oil. In return it sears better than almost anything and goes straight into the oven.
What about non‑stick for eggs?
One small pan is a fair exception if you cook eggs daily. Treat it as a consumable, keep it for eggs alone, and skip the full set.
What about sentimental things?
They stay. This is about duplicates and unused gadgets, not clearing out anything with meaning – though fifteen sentimental spatulas is still fifteen spatulas.
What if I'm starting from nothing?
Buy in order of use: knife, board, one skillet, one pot, a sheet pan. The list is prioritised so a half‑built capsule still works.
