Pork shoulder (also called pork butt) is very forgiving. It has lots of fat and collagen. Cook it low and slow until it reaches 195-205°F, and it becomes pull-apart tender. Chuck roast is second — perfect for pot roast.
Do I really need to sear the meat first?
