Do I really need a meat thermometer?
Yes — it's the single most impactful grilling purchase you'll ever make. A $15 instant-read thermometer eliminates ALL guessing. The 'poke test' that YouTube teaches is inaccurate for home grillers. What's 'carryover cooking' and why does it matter?
When you remove meat from the grill, the internal temperature CONTINUES to rise by 5-10°F as residual heat transfers inward. If you pull a steak at 135°F (target for medium-rare), it'll reach 140-145°F during rest — that's medium. The fix: pull meat 5-10°F BELOW your target temperature. Why does my chicken always come out dry?
Two reasons: 1) You're cooking chicken breast (lean, thin, dries out fast) at the same temperature as steak (too hot for chicken). Lower the grill temp to 375-400°F for breast, use indirect heat, and pull at 160°F (carryover hits 165°F = safe AND juicy). 2) You're not using thighs. Chicken thighs are almost impossible to overcook — the fat keeps them moist up to 185°F. The Cut-by-Cut guide has specific protocols for breast vs thigh.
What's two-zone cooking?
The most important grilling technique: one side of the grill is HOT (direct heat for searing), the other is COOL (indirect heat for finishing). Gas: turn on half the burners. Charcoal: push coals to one side. This setup solves almost every grilling problem: sear on the hot side for color and flavor, move to the cool side to cook through without burning. Flare-up? Move food to the cool side. That's it.
Is the reverse sear really better than regular grilling?
For steaks over 1.5 inches thick: yes, dramatically. Regular method: high heat sears the outside but the interior overcooks by the time the center reaches temperature. Reverse sear: cook slowly on indirect heat until 10-15°F below target, THEN sear over max heat for 60-90 seconds per side. Result: perfect edge-to-edge doneness with a crispy crust. The thin grey band of overcooked meat disappears. It takes 10 minutes longer but the difference is restaurant-quality.
